Whole Wheat Pancakes
from the MOMYS Cookbook

4 c. whole wheat flour
8 tsp. baking powder
1 tsp. salt
4 tsp. brown sugar

4 eggs
4 c. milk
8 T. oil

Mix first 4 ingredients in a large bowl. In a separate bowl , beat eggs and then stir in the milk and oil. Add wet ingredients to the flour mixture. Stir until moistened. Cook on hot griddle.

These are very yummy, I made them for the first time last night and the whole family enjoyed them a lot. When I make pancakes I usually will add apple pieces or blueberries to the batter. Both are delicious and I’m not sure which one I prefer! :)

What are some of the ways you like pancakes?? Please share!

~One of my little helpers! As soon as he heard the beaters going, he ran and got a stool. :) He likes to watch me in the kitchen. He also enjoys eating, I can never keep him filled, it seems. :)

Greetings all!

I recently realized that it has been a while since I posted anything here. I have been keeping busy with homeschooling, keeping a home and much more. We are getting closer to moving into our new house too. The painter might be able to start painting next week. This evening my husband and I will go over the colours one last time. What a learning experience that has been, but God is faithful and good!

Anyway, I guess I'm not sure what others like to read on here!!

This is my two youngest ones, B. is 3 and K. is almost 16 months. We were busy making Banana Chocolate Chip Muffins. They are a favourite here. I am trying to have fun in the kitchen, all to often, I just want to tell the children to go and play, but I know they want to be here with me and help where they can. God is teaching me here! That afternoon, I just had the 2 little ones, so it was lots of fun, but when I have all five then it is rather challenging. Being a mother is wonderful I wouldn't want to trade it for anything. I just need to be the mommy God has called me to be.

I would love to see more posts here, so any ideas? I hope to be back again soon. :)

Now the God of peace, that brought again from the dead our Lord Jesus, that great shepherd of the sheep, through the blood of the everlasting covenant, Make you perfect in every good work to do his will, working in you that which is wellpleasing in his sight, through Jesus Christ; to whom be glory for ever and ever. Amen.

Pictures, Anyone?
We're at work on Tapestries once again. Starting with the next issue, we will have a new devotional column. I am trying to make some kind of a header that we can use regularly with this column. I wanted something with a picture of a girl/woman looking somewhat thoughtful - maybe in a field or looking out at a lake or... something. Does that make any sense? =D I am having a hard time finding pictures I like, though. Do any of you ladies have pictures of yourselves or have anything you suggest?
On another note, photo contest pictures coming soon to be voted on!!!
Ruth and I talked on the phone again today. Believe it or not, we've been working on Issue 12. I was talking with a friend the other day and commented that I used to get impatient waiting on magazines but now, I don't. I had no idea the time and effort that went into a single issue. Now I do. :-) So, thank y'all for your patience with us!

One thing I am in need of, for Issue 12 are some pictures of subscribers. It could be a picture of you, of you and your family, of you and a friend - just some subscriber pictures!

Also, someone left a comment asking about the photo contest. Ruth is in the process of organizing all the pictures, scanning some in, etc. but we hope to have them up on the blog soon. Thank you to everyone who contributed!

Parmesan Chicken (Quick Cooking cookbook 2001)

1/2 c. bread crumbs (I only had about 1/4 c. so used some crushed saltines instead)
1/2 c. grated parmesan cheese divided (i only had a cube of it that I got cheap a long time ago so grated it myself into the crumbs)
1/2 t. basil (skipped)
1 1/2 t. oregano (skipped)
1/2 t. salt
1/4 t. pepper
(I added 1/8 t. garlic powder to it, not in the recipe)
1 egg
1 T water
4 boneless chicken breast halves (I used 6 chicken tenders and cut them in half so they were were still long, but thinner and made them into 10 pieces as all of them were not big enough to cut in half)
2 T butter (I used olive oil)
1/2 t. garlic salt
2 c. spaghetti sauce
1 c. mozzarella cheese
Hot cooked pasta of your choice

Mix crumbs, 1/4 c. cheese, spices. In a bowl mix the egg and water. Dip chicken in egg mixture first then crumbs. In skillet cook chicken on both sides in butter until juice run clear. It says to heat the sauce with the garlic salt and then put over the chicken. I did not. I added less sauce as I wanted the chicken not to soggy. I topped it with maybe a cup and half and then the cheese (the leftover parmesan too) sprinkled with a little garlic and then covered so it would melt. We served it on spaghetti with a really yummy homemade ceasar salad.

Oh, I used less cheese on top too. It did not quite need all of that!

Before the Season ends

You can go here to this blog to enter to win a copy of this book that i have not read now myself, but many people are reviewing it and it is very interesting to read about it, especially if you are a Jane Austen fan.

Playdough Recipe
Something do with the kids on those cold winter days....

1 c. flour
1/2 c. salt
2 tsp. cream of tartar
1 Tbsp. oil
1 c. water
food coloring, desired amount

Mix dry ingredients in a saucepan. Add oil, water and food coloring. Cook 3 minutes on med/low until dough pulls away from the side of the pan. Cool completely. If the consistency is thinner than you like, you can knead in extra flour at the end. To preserve designs, shape and bake.

* Note: I also added a little bit of lemon extract to make it smell good. = )

Blog Revival?
I hope so. We certainly need it here. =D I had a nice long chat with LeAnne today and it inspired me to get back to blogging and to Tapestries work again. I've been discouraged Tapestries -wise lately. It is so hard to find courtship stories (we still don't have really any leads on anything for the next issue) and formatting just takes so much time. Still... they're not good excuses, I know. My goal lately has just been the bare bones around the house. I'm 13 weeks pregnant now, so I am hoping my energy level will start to rise soon. I am usually okay during the morning but after lunch any remaining energy seems to evaporate. Right now the children are getting over bad colds, too.
I have dusted off the bookshelf and done more reading lately, since that is something that doesn't require too much effort. =D Book reviews may be coming, although I am somewhat hesitant since several of the books I read recently I was disappointed in. We'll see.
What has everyone else been doing? How are you all planning to spend the long winter months? Any special projects?
