Whole Wheat Pancakes
from the MOMYS Cookbook

4 c. whole wheat flour
8 tsp. baking powder
1 tsp. salt
4 tsp. brown sugar

4 eggs
4 c. milk
8 T. oil

Mix first 4 ingredients in a large bowl. In a separate bowl , beat eggs and then stir in the milk and oil. Add wet ingredients to the flour mixture. Stir until moistened. Cook on hot griddle.

These are very yummy, I made them for the first time last night and the whole family enjoyed them a lot. When I make pancakes I usually will add apple pieces or blueberries to the batter. Both are delicious and I’m not sure which one I prefer! :)

~One of my little helpers! As soon as he heard the beaters going, he ran and got a stool. :) He likes to watch me in the kitchen. He also enjoys eating, I can never keep him filled, it seems. :)

We like kefir pancakes with regular butter and syrup or homemade syrup- like blackberry, plum or gooseberry. Sometimes I like a puffed oven pancake with apples or other fruit too. Mmm!

We like pancakes pretty much anyway...but with fruit in them, I really like them. Crepes are fun though too with fruit and whipped cream! Yum!

I eat mine with peanut butter. My dad always loved peanut butter as a kid and put it on everything! He even was dared by an uncle to eat it on fish-which he doesn't recommend. So as a kid, I watched him eat peanut butter on his pancakes and the tradition was born. My kids love it too! But occasionally we have sprinkles and whipped cream or they like strawberries!

We made crepes this week and we had some with jam, some with honey and some with lemon and a small amount of sugar. the honey were the favorite!
