Pumpkin recipes


I found a couple of recipes while digging among some I had saved and thought maybe some other people had pumpkin to use up this time of year too! I have not tried this yet, so if you get to before I get to, comment and let me know!


Pumpkin Streusel Muffins
2 1/2 c. flour
2 c. sugar (There is no way I will use all that, at least cup it in half, maybe more because of the topping)
1 T. pumpkin pie spice
1 t. baking soda
1/2 t. salt
2 eggs, lightly beaten
1 c. pumpkin puree
1/2 c. oil
2 c. chopped, diced and peeled apple
Topping:
2 T. flour
1/4 sugar
1/2 t. cinnamon
1 T. and 1 t. butter
Preheat oven to 350.
In large bowl mix dry ingredients. In another wet ingredients. Mix together, just stirring until mixed. Fold in apples. Spoon into 18 greased muffin pan cups. In small bowl mix topping together and sprinkle on top of muffin batter in each cup. Bake i oven for 35-40 minutes (wow....that is what it says, but we will see....) or until done.
