Our Latest Favorite Lunch




Toasty Baguettes with Fresh Tomato and Cheddar Cheese

Slice desired amount of baguette bread fairly thin. Dice tomato, arrange over top of bread. Top with a layer of sliced cheddar cheese (Seriously Sharp Cheddar from Cabot is our favorite) and sprinkle with basil, oregano, garlic powder and/or Italian seasoning. Broil about 5 minutes until cheese is slightly browned.


During a recent shopping trip, I discovered that our local Costco sells this baguettes bread for a reasonable price. This makes a quick and easy lunch and is a good way to use some of those tomatoes that are ripening so quickly out in the garden. = )

I have actually been contemplating making my own baguettes, but have not yet gotten back to my own flour/grinding - bread/making routine yet and was a little afraid. =D I hope to not disapppoint you for long and be able to post that I have made my own... someday at least. LOL
